Dimitris Michalis Spiliadis is an organic restaurateur and sommelier, green engineer and sustainable developer. He is a partner and general manager of The Black Olive Restaurant in Fells Point, Maryland, an authentic Greek fish tavern that specializes in organic ingredients, fresh seafood from around the world, and an award-winning wine list. The Black Olive Restaurant is consistently named one of the nation’s best by Zagat, Gourmet Magazine, Wine Spectator, Baltimore Magazine, The Baltimore Sun, and Baltimore’s City Paper.
Dimitris is also equity partner and chief financial officer of The Black Olive Development Company, a partner of B & D Development and owner of Platinum Construction, three companies dedicated to LEED’s Platinum Green Building—the use of design and building practices that engender sustainable site planning and indoor environmental quality, as well as conservation and efficient use of water, energy, and resources—resulting in buildings that have a positive impact on occupants, cost less to operate and are environmentally friendly. Using his own century old home in Baltimore’s historic Fells Point neighborhood as a model, Dimitris lives his commitment to the environment by constructing energy efficient, non-toxic buildings using geothermal, solar, and green building techniques.
As partner of The Black Olive Export Company, he serves as a sustainability consultant to a Yucatan, Mexico-based seafood company, working with local fishermen and US and Mexican marine biologists to improve working conditions, seafood handling, seafood packaging techniques, and species replenishment.
Prior to his work with The Black Olive Companies, he served as a project engineer with The Whiting Turner Construction Company and as a behavior intervention specialist and head teacher at The Children’s Guild where he worked with at-risk and emotionally challenged youth. Dimitris serves on the board of Baltimore's Greektown Community Development Corporation and is a member of the Civilian Review Board of the Baltimore City Police Department. He earned a bachelor of art in economics and religion from Drew University in 1992.
